This Handmade Dan Dan Noodles recipe brings together chewy, fresh noodles and a rich, nutty, slightly spicy sauce inspired by Sichuan street food. The noodles are made from scratch—rolled, folded, and sliced by hand—while the sauce blends sesame paste, soy sauce, peanut butter, and chili oil (optional for kids) for a bold finish. It’s a hands-on recipe that’s perfect for introducing kids to new textures and flavors, with plenty of tasks they can help with along the way.

Step by Step Guide (with Kid friendly tasks)
Step 1: The “Edible Play-Dough” (Dough)
- Mix: In a large bowl, whisk flour and salt.
Junior Chef Task: Have the kids pour the water in slowly while you stir, or let them use their hands to “squish” the flour and water together until it forms a ball. - Knead: Move to a floured counter. Knead for 8–10 minutes.
Junior Chef Task: This is the best part for kids! Show them how to push the dough away with the heels of their hands and fold it back. It’s a great workout for them. - Rest: Cover the dough and let it “nap” for 30 minutes.


Step 2: The Flavor Station (Prep)
- Marinate Pork: Mix minced pork with soy sauce, sugar, and cornstarch.
- Whisk Sauce: Combine sauce ingredients in a bowl.

- Boil: Drop noodles into boiling water for 3–7 minutes.
- Rinse: Drain and rinse under cold water.

Serves: 4
For the Noodles
- 250g high-gluten flour
- 120ml water
- Pinch of salt
For the Pork Toppings
- 200g ground pork
- 1 tbsp soy sauce
- 1 tsp sugar
- 1 tsp cornstarch
- 2 shallots, diced2
- 30g spring onion, chopped
- 30g peanuts, chopped
- 4 garlic cloves, minced
For the Sauce
- 1 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp chili oil (omit if serving for kids)
- 2 tbsp peanut butter
- 2 tbsp sesame paste
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 cup water
Instructions:
- Mix flour, salt, and water. Knead into a smooth dough. Rest for 30 minutes.
- While the dough is resting, mix the sauce ingredients in a bowl until smooth.
- Marinate the minced pork with soy sauce, sugar and cornstarch and set aside.
- Roll the dough into a thin sheet, dust with flour on both sides and fold. Slice into thin noodles. If the noodles are wide, unroll it before cooking to prevent clumping.
- Sauté garlic and shallots. Add pork and half the peanuts. Stir in sauce.
- Boil noodles for around 3-7 minutes, depends on the thickness and width of the noodles. Once the noodles is cooked, rinse through cold water.
- Pour the pork sauce mixture over noodles. Top with remaining peanuts and spring onions.
Toddler Tips:
- Let kids mash dough, sprinkle flour, and shake out noodles
- Use mild chili oil or skip it for a gentle version
- Offer toppings in small bowls for “noodle decorating”
- Talk about textures—chewy noodles, crunchy peanuts, smooth sauce
- Turn assembly into a pretend noodle shop game!
Notes:
- You can freeze uncooked noodles in the freezer for a month.
